Boom! The Ice Cream Bombe Cake Has Landed

Layers of ice cream wrapped in cake and chocolate? This is the dessert equivalent of fireworks—big, bold, and guaranteed to wow.

INGREDIENTS:

  • 3 packets Ben & Jerrys Brookies & Cream ""Peaces""
  • 3 chocolate Swiss rolls
  • 300g dark chocolate
  • 50g white chocolate
DIRECTIONS:
  1. Step 1

    Take the Brookies out of the freezer and allow them to thaw a little bit - only 5 mins or so.

  2. Step 2

    Meanwhile, line a large mixing bowl with clingfilm and slice up the swiss rolls - roughly 2cm thick. Press them into the bowl and try to make sure there are no gaps.

  3. Step 3

    Fill the cake lined bowl with the Brookie Peaces, pressing them in to make sure they fill up the cavity. Top them with more Swiss roll slices.

  4. Step 4

    Place the bowl back in the freezer and freeze until solid - roughly 3 hours.

  5. Step 5

    When frozen, melt the dark chocolate (in a microwave or over a double boiler) and pour it over the bombe (set it over a lined baking tray on a rack to make this less messy).

  6. Step 6

    Scatter with grated white chocolate and serve.
